Zucchini Soup (Lunch Recipe)


Ready in 20 minutes

Serves 2 people


Ingredients

 

·       1 tbsp oil

·       1 zucchini

·       1⁄2 small onion

·       1 tbsp tomato paste

·       Black pepper and salt

·       1 tsp basil

·       1 garlic clove

·       2 cups vegetable stock

·       Mix seasoning

 

Preparation

 

·       Cook the oil, onion, and garlic until the onion softens.

·       Add the tomato paste and seasoning and cook for 2 minutes.

·       Add the zucchini and cook for 4 minutes. Add the vegetable stock and simmer for 20 minutes, or until the zucchini softens.

·       Set aside some of the cooked zucchini and use a hand blender to blend the soup. Add water if needed, then return the zucchini and simmer for 5 minutes.

Serve with some lemon and bread, and garnish with some parsley.
