Vegan Baked Oats (Breakfast Recipe)

Serves 2 people

Ingredients

 

·        1 cup oats

·        1 small banana

·        1⁄2 cup coconut milk

·        2 tbsp peanut butter

·        2 tbsp date syrup

·        1 tsp vanilla

·        1 tsp baking soda

·        1 tsp apple cider vinegar

 

Preparation

 

·        Preheat the oven to 180 degrees and find two small ramekins for baking.

·       Add all the ingredients to a blender and blend until the mixture reaches the consistency of a loose pancake batter. 

·       Divide the batter between the 2 ramekins and bake for 20 minutes at 180 or until the oatmeal is risen and golden.

·       Top with banana and strawberry
