Zucchini Soup (Lunch Recipe)

Ingredients

1 tbsp oil

1 zucchini

1⁄2 small onion

1 tbsp tomato paste

Black paper and salt

1 tsp basil

1 garlic clove

2 cups vegetable stock

Preparation
- Cook the oil, onion, and garlic until the onion softens.
- Add the tomato paste and seasoning, and cook for 2 minutes.
- Add the zucchini and cook for 4 minutes. Add the vegetable stock and simmer for 20 minutes, or until the zucchini softens.
- Set aside some of the cooked zucchini and use a hand blender to blend the soup. Add water if needed, then return the zucchini and simmer for 5 minutes.
- Serve with some lemon and bread, and garnish with some parsley.
