Zucchini Soup (Lunch Recipe)

Serves 2 people

  1. Cook the oil, onion, and garlic until the onion softens. 
  2.  Add the tomato paste and seasoning, and cook for 2 minutes. 
  3. Add the zucchini and cook for 4 minutes. Add the vegetable stock and simmer for 20 minutes, or until the zucchini softens.
  4. Set aside some of the cooked zucchini and use a hand blender to blend the soup. Add water if needed, then return the zucchini and simmer for 5 minutes.
  5. Serve with some lemon and bread, and garnish with some parsley.
